A piece of technology you find fascinating: I have to choose the Jacquard loom, which was first demonstrated way back in 1801. It was a machine for weaving textiles, but its true genius was how it used replaceable punched cards to tell the loom which threads to lift, creating incredibly complex patterns automatically. This was the first machine to use stored, programmable instructions, and it's a direct ancestor of the punch cards that powered the first digital computers more than a century later.
